Avocado Gelato

Directions:

  1. prep
    • cut the avocados in half and remove pits
    • scoop out flesh with a large spoon
  2. blend
    • purée the avocado, lime juice+zest, sugar, and half of the cream until smooth
    • set to low speed, add the remaining cream
  3. chill
    • transfer purée to an air-tight container
    • chill until it reaches refridgerator temperature (2 hrs?)
  4. mix
    • process in a gelato maker, until mix reaches soft-serve consistency
    • probably only 10-20 minutes
    • harden in freeze for a firmer texture
