Bread and Butter Pickles

Ingredients:
- 5 persian cucumbers (1.5 lbs)
- 1.5 Tbs pickling salt
- 1 small white onion
- 1 cup sugar
- .5 cup apple cider vinegar
- 1 cup cider turning vinegar (2018 #1)
- 1 tsp mustard powder
- .5 tsp celery seeds
- .5 tsp coriander seeds
- .125 tsp turmeric powder
Directions:
- prep cucumbers
- wash and slice to .25 in thick
- toss slices with salt in a bowl
- chill bowl +1.5 hrs in fridge
- then rise slightly in cold water
- cook veggies
- slice onion and toss with cucumbers
- mix remaining ingredients in a medium saucepan
- bring to a simmer over medium heat, stirring until the sugar dissolves
- fill jars
- pack vegetables into sanitized jars (which are still hot)
- pour the hot vinegar mixture over vegetables
Preserving:
Canning
- seal and boil at least 10 min
Refridgerator
- let stand 1 hour at room temperature
- seal and refrigerate +1 days before eating
- may be stored in an airtight container up to 1 month
Substitutions:
- sugar with 2/3 honey
- mustard powder with 1/2 mustard seed
Notes:
- Modify cucumber:liquid ratio to increase veggies by 1/3
