Directions:

  1. prep cucumbers
    • wash and slice to .25 in thick
    • toss slices with salt in a bowl
    • chill bowl +1.5 hrs in fridge
    • then rise slightly in cold water
  2. cook veggies
    • slice onion and toss with cucumbers
    • mix remaining ingredients in a medium saucepan
    • bring to a simmer over medium heat, stirring until the sugar dissolves
  3. fill jars
    • pack vegetables into sanitized jars (which are still hot)
    • pour the hot vinegar mixture over vegetables
