Cooked Beans

- yields:
- 6 cups cooked whole beans
- 2 cups refried beans
Ingredients:
- 1 lb dried beans (2 cups)
- 8 cups water
- bay leaf
- onion (optional)
Directions:
- cooking
- rinse and sort dried beans, removing any rocks
- place ingredients into Instant Pot
- cook on high pressure for the directed time (see below)
- after the cook time finishes, let the pressure release naturally for at least 20 minutes
- then do a quick release of pressure
- flavoring
- add in a splash of apple cider vinegar (makes beans easier to digest) and salt (flavors the beans)
- making refried beans
- pour excess liquid into a sauté pan
- stir on low heat
- reduce to desired thickness
Preserving:
refridgerator:
- store cooked beans up to 5 days
- keep within some of the cooking liquid to keep them moist and tender; drain before serving
freezer:
- prepare beans in 1-2 cup portions in freezer containers plus some cooking liquid
- store up to 3 months
