Fermented Spring Garlic

- 300 ml spring garlic (after purée)
- 30 g sea salt
- 10 g sugar
- dash black pepper
Directions:
- prep
- clean and purée the garlic greens
- sterilized a pint jar
- pack
- pack the purée into the jar
- use a pickle pebble (weight)
- use a pickle pipe airlock
- ferment
- let sit at room temperate for at least a week
Preserving:
- may be stored in airtight container in fridge for a few months
Notes:
- pairs well with crème fraîche and soft cheeses
