Directions:

  1. grease ramekins
    • coat the interior of ramekins (or other containers) with butter, lightly
  2. bloom the gelatin
    • pour half of the cream into a saucepan
    • sprinkle the powdered gelatin evenly over the top
    • allow the gelatin to soften (bloom) for 5 minutes or until the surface of the cream is wrinkled
  3. dissolve gelatin
    • warm the cream gently over low heat, stirring or whisking frequently
    • do not boil
  4. dissolve sugar
    • stir sugar into the cream
    • continue warming until the sugar dissolves as well
    • do not boil
  5. mix
    • remove from heat
    • whisk in the remaining cream, plus vanilla and salt
  6. mold
    • pour the mix evenly into the serving containers
    • chill until firm; probably 2-3 hours
