Panna Cotta

Ingredients:
- 360 ml (1.5 cups) half and half cream
- 5 g (1.5 tsp) powdered gelatin
- 25 g (2 Tbs) sugar
- 5 ml (1 tsp) vanilla extract
- pinch salt
Directions:
- grease ramekins
- coat the interior of ramekins (or other containers) with butter, lightly
- bloom the gelatin
- pour half of the cream into a saucepan
- sprinkle the powdered gelatin evenly over the top
- allow the gelatin to soften (bloom) for 5 minutes or until the surface of the cream is wrinkled
- dissolve gelatin
- warm the cream gently over low heat, stirring or whisking frequently
- do not boil
- dissolve sugar
- stir sugar into the cream
- continue warming until the sugar dissolves as well
- do not boil
- mix
- remove from heat
- whisk in the remaining cream, plus vanilla and salt
- mold
- pour the mix evenly into the serving containers
- chill until firm; probably 2-3 hours
