Rice Pudding
Ingredients:
- 1 Tbs butter or olive oil
- 1.5 cups cooked rice
- .25 cup raisins (or other dried fruit or compote, e.g., persimmon)
- 2 large eggs
- 1.5 cups whole milk
- .5 cup sugar
- .5 tsp ground nutmeg (mix with allspice, cinnamon, ground cloves, etc.)
Directions:
- prepare baking dish
- grease a 1 quart casserole dish with butter or olive oil
- place rice and raisins into the dish
- pudding mix
- whisk the eggs in a small bowl
- mix in milk, sugar, and spices into the eggs
- pour mix over the rice
- bake
- bake, uncovered, at 375°F for 45-50 minutes
- or until a knife inserted in the center comes out clean
- serve
- cool before serving
- pour over with milk (also oat milk, almond milk, etc.)
- refrigerate leftovers
