Roasted Chestnuts

Directions:

  1. pre-heat oven to 425° F
  2. cut an "X" shape on the round side of each chestnut using a small serrated knife (best to wear mesh gloves) -- to keep them from exploding
  3. arrange chestnuts on a baking sheet
  4. roast 15-20 min, until the skins have pulled back from the cuts and the nutmeats have softened
  5. remove, pile then into a mound in a towel, then squeeze until they crackle
  6. let sit for a few minutes to cool
  7. peel off the dark shells and the dark papery skin
