Roasted Chestnuts

Ingredients:
- gathered chestnuts, with outer shells (stickers) removed
Directions:
- pre-heat oven to 425° F
- cut an "X" shape on the round side of each chestnut using a small serrated knife (best to wear mesh gloves) -- to keep them from exploding
- arrange chestnuts on a baking sheet
- roast 15-20 min, until the skins have pulled back from the cuts and the nutmeats have softened
- remove, pile then into a mound in a towel, then squeeze until they crackle
- let sit for a few minutes to cool
- peel off the dark shells and the dark papery skin
