Ingredients:
- 0.5 kg cabbage
- 2 Tbs sea salt
- 2 apples
- 1 kg potatoes (purple or yukon)
- 2 medium onions
- 2 Tbs olive oil
- 100 g butter
- 100 g cheddar cheese
Directions:
preheat oven to 350°F
poach cabbage
- cut cabbage into thin slices
- place cabbage slices and salt in a large sauce pan
- just barely cover with water
- stir frequently over medium heat, until cabbage softens
- use a slotted spoon to transfer cabbage into a baking dish, spread evenly
- reserve the liquid
- cube apples
- core apples and cut into small cubes
- spread evenly in the baking dish, as a layer atop the cabbage
- sauté onions
- cut onions into thin slices
- place olive oil, onions, and 1 Tbs salt into a sauté pan
- stir frequently over low heat, until onions just begin to turn golden
- mash potatoes
- slice potatoes and add to the sauce pan used for the cabbage, with reserved liquid
- cover and cook until potatoes soften
- add butter and let melt completely
- transfer the potatoes, melted butter, and any liquid to a mixing bowl
- mash potatoes -- which may have liquid
- layer the baking dish
- spread onions evenly in the baking dish, as a layer atop the apples
- spread mashed potatoes evenly in the baking dish, as a layer atop the onions
- grate cheese atop the potatoes
- baking
- bake for 40 min, until the cheese starts to bubble
